Easter Baking – getting creative with chocolate bunnies!

I’ve got a cupboard full of chocolate after the Easter weekend.

So it’s the perfect excuse for some baking!

This banana cake recipe is perfect for the occasion as it uses a chocolate rabbit.

Chocolate Banana Loaf

The recipe makes a whole loaf cake…but it gets eaten quickly as can be seen from the photo!

You’ll need
4oz margarine (butter also works well)
3oz demerara sugar
2 eggs
2 tbsp milk
2 mashed bananas
2 tsp cinnamon
8oz of self raising flour
1 chocolate rabbit (or chocolate chips/chocolate bar)

Set oven to gas mark 4/180°c. In a mixer, (or by hand with a bit more effort) cream the margarine and sugar together and then add the eggs one at a time.

Sift in the flour and cinnamon and beat in.

Now add the milk and then the mashed bananas. Mix together.

Finally, break up the chocolate rabbit and stir into the mixture.

Scrape cake mixture into a loaf tin and bake in the oven for 40 – 45 minutes.

This recipe would also be great to box up and take along to a picnic! If it’s not eaten up straight away, it’ll last a few days in an air tight container.
